Frugal Food Thursday: Spicy Roasted Chickpeas

As I mentioned in my post about my Garlic-Parmesan White Bean Mash, I've been on a lower-carb diet for the past year.  One of the difficulties of this kind of diet is finding snacks!  Most snack foods are high in carbohydrates.  Nuts are good snacks, but too much of them isn't good for this diet, either.

So I was happy to discover roasted chickpeas!  They're finger food, crunchy, and addictive.  Plus, they're very healthy!  It's an excellent substititute for potato chips or other crunchy, carb-filled snack foods.

They're also very economical.  I've been able to purchase cans of chickpeas (garbanzo beans) for 33¢ a can on sale.  Besides that, all you'll need is a little olive oil, spices, and the energy to run the oven.

Today I made a batch of roasted chickpeas and added my 7-Spice Seasoning to it.  It added a flavor beyond just the usual salt, pepper, and garlic powder.  It was great!  I noshed on a bowl of them while writing up this recipe!

SPICY ROASTED CHICKPEAS

1 can chickpeas (garbanzo beans), drained
1 tbsp olive oil
1/2 tbsp 7-Spice Seasoning (recipe follows)
salt to taste

Preheat oven to 450 degrees.

Drain chickpeas in a colander.  Run cold water over the chickpeas to remove the canning liquid.  Allow to drain for 10 minutes.  Place chickpeas on a paper towel and pat them dry with a second paper towel.

Place chickpeas in a small mixing bowl.  Add olive oil and spice seasoning.  Mix until the chickpeas are covered with oil and spices.

Put chickpeas on a baking sheet in a single layer.  Bake for 30-40 minutes or until chickpeas are crisp, stirring every 10 minutes.  Watch carefully near the end of the cook time, as chickpeas can burn.  Add salt to taste.  Munch away!

7-SPICE SEASONING

3 tbsp paprika
3 tbsp garlic powder
1 tbsp onion powder
1 tbsp dry mustard
1 tbsp thyme
1 tbsp ground black pepper
1 tbsp kosher salt

In a small bowl, mix the spices together.  Store in a 5-oz spice bottle.

We *LOVE* roasted chickpeas around here! I usually make a triple batch as my 12 & 14 yr old boys can polish off an alarming amount of these in the blink of an eye :)

I have one question. Do your chickpeas ever come out rock-hard? I followed a recipe for these a couple months ago and I sprouted mine, as I start from dry beans. I baked them till they were done (not burnt) but they came out so hard I was afraid we'd crack a tooth. They were amazingly good except for the hardness factor.

Actually, one other question: anyone ever use other beans for this? I didn't know if that was possible, but I'm asking anyway. ;-)

What a clever idea! Would you ever try them with dried chickpeas that you soak and cook yourself? I wonder how, if at all, it would change the consistency? Thanks for linking this healthy snack to Food on Fridays!
