Banana-Apple Bread (Frugal Food Thursday)

It's fall here in South Florida.  That means that it gets into the 70s at night, but it's still in the high 80s during the day.  Not exactly the kind of crisp weather you hope for fall.

But what we do have that is crisp is apples!  Okay, they don't grow here, but we get them nonetheless!  Here's a favorite frugal, fun food with apples - banana-apple bread!

Here's the recipe:

APPLE-BANANA BREAD

1 cup sugar
1 stick (8 oz) butter, softened
1 egg
1 tsp vanilla
3 very ripe bananas
1 tsp baking soda
2 cups flour
2-3 apples, peeled, cored, and chopped.

Cream sugar and butter together.  Add egg and vanilla and mix well.  In a separate bowl, mash up the ripe bananas with a fork, then add to the sugar mixture.

In a separate bowl, mix the baking soda and flour together.  Add flour mixture to sugar mixture and mix until all ingredients are moistened.

Add chopped apples until they are incorporated into the batter.

Grease and flour 2 bread pans.  Fill with mixture until pans are 2/3 full.  Bake at 350 for one hour, covering the tops of the pans lightly with aluminum foil.  Remove the foil and bake for 10 more minutes or until a knife inserted in the bread comes out clean.

Apples and bananas sound like a wonderful combination in your bread. Here's a recipe for Fudge Brownies with Lentil & Cocoa. They're rich and chewy and so very frugal!

This sounds delicious, and I don't even like bananas. ;) We often have extra bananas that wind up going to waste - this sounds like a great way to utilize them!

Yum! I've never added apples to my banana bread before, but it sounds delicious.
