Spinach and Mushroom Dip (Frugal Food Thursday)

This has been a crazy busy week at the Frugal Follies household, and it's only going to get more crazy and more busy!  So I'm rerunning one of my favorite recipes that I got from my mother-in-law, Spinach and Mushroom Dip.

This recipe is perfect for an appetizer for your Thanksgiving dinner.  Serve with with vegetable sticks, crackers, or tortilla chips.  Keep it in a mini crock pot or chafing dish to keep it warm!

Here's  the recipe:

SPINACH AND MUSHROOM DIP

1 10-oz package frozen spinach
2 tbsp butter or margarine
1 medium onion, chopped finely
2 4-oz cans mushrooms, drained
1 10.75-oz can cream of mushroom soup
1/4 lb grated sharp cheddar cheese
1 tsp garlic powder
freshly ground pepper to taste

Cook spinach according to package directions; drain well. In a medium saucepan, melt the butter over medium heat. Saute the onion for 2-3 minutes or until translucent.

Add the spinach, mushrooms, soup, cheese, and spices. Cook on low for 30 minutes, mixing every couple of minutes to make sure that the dip does not stick to the bottom of the pan.

Serve while still warm in a mini crockpot or a chafing dish. Or, refrigerate until serving, then reheat gently.

Your dip sounds lovely, and I like that it is made with things from the store cupboard and freezer as well. Warm dips are such a treat this time of year!
