Fresh Mango Salsa (Frugal Food Thursday)

This week, I'm featuring Fresh Mango Salsa!

It's mango season here at the Frugal Follies household.  The backyard mango tree is producing tons of fruit.  And because of the wind gusts from the outskirts of Tropical Storm Debby, they're falling down on the backyard grass like rain!

While I deal with all of these mangoes, here's a recipe for a fresh mango salsa that I made and posted last year.  It is incredibly yummy!

Here's the recipe:


FRESH MANGO SALSA

2 scallions, chopped
1 Roma tomato, seeds removed and chopped
1/2 cucumber, peeled and chopped
1/2 yellow pepper, seeds removed and chopped
12 chunks canned pineapple, chopped
1 mango, peeled, pit removed, and chopped (here's how to cut up a mango)
1/4 cup fresh cilantro, chopped
1 jalapeno, seeds and ribs removed and chopped
Salt to taste

Mix ingredients together.  Add salt to taste. Cool in refrigerator for at least 1 hour for flavors to blend.

Hi! I found you via Make Ahead Meals for Busy Moms. I love your mango salsa recipe. At first, I thought it was going to be sweet, but I'm delighted to see it's savory! How wonderful to have a mango tree! Your salsa sounds delicious and looks so lovely and colourful. I like the addition of the pineapple too.
