Fresh Mango Salsa (Frugal Food Thursday)

mango salsa

Welcome to Frugal Food Thursday!  If you have a great frugal recipe, please link up below!

This week, I'm featuring Fresh Mango Salsa!

It's mango season here at the Frugal Follies household.  The backyard mango tree is producing tons of fruit.  And because of the wind gusts from the outskirts of Tropical Storm Debby, they're falling down on the backyard grass like rain!

While I deal with all of these mangoes, here's a recipe for a fresh mango salsa that I made and posted last year.  It is incredibly yummy!

Here's the recipe:

(click here for the original recipe source)

2 scallions, chopped
1 Roma tomato, seeds removed and chopped
1/2 cucumber, peeled and chopped
1/2 yellow pepper, seeds removed and chopped
12 chunks canned pineapple, chopped
1 mango, peeled, pit removed, and chopped (here's how to cut up a mango)
1/4 cup fresh cilantro, chopped
1 jalapeno, seeds and ribs removed and chopped
Salt to taste

Mix ingredients together.  Add salt to taste. Cool in refrigerator for at least 1 hour for flavors to blend.

There are lots more cheap recipes posted here at Frugal FolliesClick here for the list!

Can't wait to try it with some homemade pita chips or corn tortilla chips! Love your Frugal Food Thursday hop, as well. I found a couple interesting links! Thank you for sharing.
