Menu Plan 5-21-12: Leftover poultry meals


Lots of poultry leftovers this week!  I made turkey soup out of some leftover turkey legs and wings from the last time I cooked a turkey.  And I roasted a chicken for dinner last Friday.  So now I have lots of leftover meat to make stir-fries and other meals.

Luckily, I have lots of recipes that use leftover chicken and turkey in my cheap recipe list. So I'll be planning meals to use them up!

So here are my dinner plans:

Monday - turkey stir-fry over brown rice

Tuesday - Chicken Basquaise over pasta

Wednesday - Fresh Take Salmon Salad

Thursday - garlic and mushroom whole wheat pizza

Friday -  Picadillo over brown rice, salad, challah

Saturday: 3 Can Veggie Chili over pasta

Sunday - dinner out!

I love how varied your menu plan is! It makes me want to be more creative with the foods we try.
