Cookout Macaroni Salad (Frugal Food Thursday)

It's summer, which means it's time for cookouts!  My whole crew loves when we can eat hamburgers or hot dogs for dinner.  Here's a simple and cheap macaroni salad side dish to go with those yummy summer meals!

Here's the recipe:


COOKOUT MACARONI SALAD

1/2 lb dry elbow macaroni
1/2 onion, finely diced
2 carrots, finely diced
2 celery ribs, finely diced
1 red pepper, finely diced
1/2 cup mayonnaise
2 tbsp Dijon mustard
1 tsp garlic powder
1 tsp paprika
salt and freshly ground pepper to taste

Cook macaroni according to package directions; drain in a colander, rinse with cold water, and drain again.

In a large bowl, combine the vegetables, mayonnaise, mustard, and spices.  Mix well.  Add the cooked, cooled macaroni to the bowl and mix until well blended.

Put in the refrigerator for 1 hour to allow flavors to meld.

It looks amazing! We have a very similar recipe, except mine doesn't use carrots or paprika.
