Turn leftover salad into a delicious dish


Welcome to this week's Frugal Follies Frugal Tip!

Here's one of my favorite tips on what to do with leftover salad - turn it into tabbouleh!

Take your leftover salad and chop it in the food processor.  If you have it, add some scallions, parsley, and garlic in as well.  If not, no big deal.

Then boil 2 cups of water and add 1 cup of bulgur wheat.  (You can find this either in the supermarket's rice and pasta aisle or in the flour and breadcrumbs aisle; I use the Goya brand.)  Cover the pot, turn the heat to medium-low, and cook until all the liquid is absorbed, about 15 minutes.

Then, combine the chopped veggies with the bulgur wheat, add a few drizzles of olive oil, a few drops of lemon juice, and some salt and pepper.

And you have turned leftover salad into tabbouleh!
