Menu plan 9-10-12: Quick dinners needed


The beginning of school means that my children's activities are starting up again.  Several days a week, I'll be running around either picking them up from afterschool clubs, or taking them to and from outside activities.  That means that the last thing I'll want to do when I get home is to start cooking a big meal.  So long, drawn-out dinners are out, quick cooking is in!

So here are my dinner plans:

Monday - veggie chili over pasta

Tuesday - salmon with 7 spice seasoning over salad greens

Wednesday - tuna noodle casserole, salad

Thursday - yellow pepper whole wheat pizza

Friday - baked chicken thighs with mango chile sauce, brown rice, salad, challah

Saturday - banana whole wheat waffles

Sunday - Erev Rosh Hashanah dinner at family members' home

I love topping my chili with plain greek yogurt, green onions, little cheese... YUM! great week menu.
