Feta and Tomato Pasta (Frugal Food Thursday)

One of my favorite shopping secrets is that Publix often has unadvertised deals! These are deals that either they chose to keep secret until you find them at the store, or deals that came about too late to get into the weekly ad. I find out about them at I Heart Publix each week before I head to the store to get my deals.

Often they are for refrigerated food like salad dressing, fresh salsa, or cheese. Often I've seen unadvertised deals for feta cheese. When I see one, especially if there is a matching coupon, I always scoop it up!

I love to combine feta with tomatoes - they just seem to go together well.  Add some olive oil, freshly ground black pepper, and serve it over pasta, and you have a wonderful pasta meal!

Here's the recipe:

FETA AND TOMATO PASTA

8 oz dried mini penne pasta
2 large vine-ripened tomatoes, diced
1/4 cup extra-virgin olive oil
4 oz feta cheese crumbles
freshly ground black pepper
salt to taste

In a large pot, boil 6 quarts of water.  Add the mini penne, bring water back to a boil, and simmer for 7 minutes.  Add the diced tomatoes to the cooking water and simmer for 1 more minute.  Drain and place the pasta and tomatoes in a large bowl.

Add the olive oil to the pasta and toss well to coat.  Add the feta cheese, as much freshly ground black pepper as you like, and a pinch of salt.  Toss well to combine all ingredients.

Makes 4 servings.

I left a link for herb cream cheese stuffed cucumber roll ups. They look fancy but are a cinch to make. I was looking for a new way to use my bumper crop of cucumbers. I made a whole platter for 99 cents, which was the cost of the cream cheese on sale!
