Cilantro Pesto Guacamole - Guac Off Recipe Contest

I love guacamole - it's a great party food.  And with the big game coming, I decided to create a great  guacamole recipe.  I loved the flavors of my avocado and cilantro pesto pizza that I made recently, so I decided to make a dip with the same flavors out of it.

CILANTRO PESTO GUACAMOLE

1 bunch cilantro
2 tbsp olive oil
1/4 cup Parmesan cheese
1 garlic clove, peeled
2 jalapenos, seeds and ribs removed, chopped finely
1/2 yellow onion, chopped finely
2 Roma tomatoes, chopped finely
2 Avocados from Mexico
1 tsp lemon juice
salt and freshly ground pepper to taste

Make the cilantro pesto: Remove leaves from the cilantro stems.  In a food processor container place the cilantro leaves, olive oil,  Parmesan, and garlic clove.  Process until smooth.  Place pesto in a medium bowl.

To the medium bowl, add the chopped jalapenos, onion, and tomatoes.

Cut the avocados in half.  Remove the pit and scoop out the flesh into a small bowl, reserving the avocado shells.  Mash the avocado with the back of a fork.  Add the lemon juice to keep the guacamole from discoloring.  Add salt and freshly ground pepper to taste.  Put the mashed avocado in the medium bowl and mix until well blended.  Add more salt and freshly ground pepper to taste.  Serve in the reserved hollowed-out avocado shells.
