Frugal Food Thursday: Chocolate Chip Pound Cake

So when my eldest daughter was about seven, she was really into Pokemon.  She had a Pokemon poster in her room (bought at a neighbor's yard sale - a frugal kid in training!) on which there were 150 different Pokemon.

One day I told her, "If you can memorize all 150 names, I will make you a cake."

The challenge came and went, and I forgot about it, until last weekend.  My now fourteen-year-old asked me, "Mom, remember how you challenged me to memorize all 150 Pokemon?"

"Umm, yeah, I guess," I replied.

"Is that offer still good?"

She sat down at her computer and over the next several hours, without looking online, typed in the names of Pokemon she remembered.  And at the end of the evening, she told me she had all 150 names.

We don't have the poster anymore, so I took her at her word.  And I started thinking up ideas for cakes.

I wanted to use some of the chocolate chips we got on sale with coupons at Publix last week, as well as the butter I found on sale at ALDI.  After a little thought, I figured that a chocolate chip pound cake would feature both those ingredients nicely.

I adapted this recipe from The Purple Foodie.  I actually doubled the recipe and made a second loaf to bring with me on a condolence call I made later that day.  It was a much appreciated gift.

And it was super yummy - nice and moist, with just the right amount of chocolate chips.  And while we ate a piece, my youngest asked, "Mom, what can I do to get a cake?"  Stay tuned...

CHOCOLATE CHIP POUND CAKE

2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
2 sticks (8 oz) butter, softened
1 cup sugar
4 large eggs
1 tsp vanilla extract
2/3 cup chocolate chips, plus more to sprinkle

Preheat the oven to 350 degrees.  Spray a 9x5 loaf pan with cooking spray.

Sift the flour, baking powder, and salt together into a medium bowl.  Set aside.

Place the butter and sugar in a large mixing bowl.  Use a hand mixer on medium speed to mix the butter and sugar together.  Add the eggs and vanilla and mix again until light and fluffy.

Add the flour into the butter mixture a little at a time and mix with a wooden spoon.  Continue to add the rest of the flour until all ingredients are moistened.  Add the 2/3 cup chocolate chips and mix until well combined.

Pour mixture into the loaf pan.  Bake for 10 minutes.  Remove pan from oven and sprinkle loaf with the remaining chocolate chips.  Bake for another 20 minutes, then cover with aluminum foil.  Bake for another 10-30 minutes, or until a skewer inserted in the cake comes out clean.

Allow to cool for 15 minutes in the pan, then remove to a wire rack and allow cake to cool completely.

What a great idea! My youngest daughter (who's 6) gets a small special treat after school every Friday afternoon if she has behaved all week. Sometimes she chooses a new book or puzzle, and other times it's all about the sweets. It's amazing how well chocolate works to reinforce good behavior!
