Frugal Food Thursday: Honey Cake

honey cake
Welcome to Frugal Food Thursday!  If you have a great frugal recipe, please link up below!

Here's a recipe for honey cake that I made for the Jewish holidays this year. It is nice and moist, and the kids all asked for seconds. And the leftovers stayed moist, too! Give it a try!

This is my mom's recipe. She makes it in a 9x13 pan, but I decided to use a 9x5 loaf pan instead, and serve it as slices instead of squares. Works either way!

From a frugal perspective, if you don't have all the spices listed, don't worry about it; just leave one or two of them out. It will still be tasty. And save some leftover coffee for this recipe! You can freeze leftover coffee in ice trays, then defrost the coffee ice cubes in the microwave.

HONEY CAKE

3 eggs
1 cup sugar
1 cup honey
1/4 cup canola oil
2-1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp allspice
1/2 tsp cinnamon
1/8 tsp nutmeg
1/4 tsp ginger
1/2 cup cold coffee

Preheat oven to 350 degrees. In a medium mixing bowl, mix the flour, baking powder, baking soda, and spices. To the egg mixture add half the flour mixture, then half the coffee, then the second half of the flour, and lastly the second half of the coffee. Mix well.

Spray cooking spray on a 9x5 loaf pan. Line with waxed paper and spray cooking spray on the paper. Pour batter into the pan and bake at 350 degrees for 30 minutes. Cover loaf with aluminum foil and bake for another 30 minutes or until a toothpick inserted in the loaf comes out clean.

What an easy recipe! I love honey cake and have never tried to make one. I love the tip for the coffee as well.

I love the combination of flavors in your honey cake recipe. Good idea to save brewed coffee in ice cubes, too -- on the rare occasion that I have any left over ;-) My recipe today is for Gluten-Free Chili with Tomatoes, which reminds me of my hometown, San Antonio. Chili was the ultimate nourishing, frugal dish back in the day, when people made do with what was local. It's still filling and economical, as well as easy!

Using honey to replace part of the sugar sounds delightful and I like the idea of a loaf to slice too.

First time here and new Facebook follower. :) Your honey cake looks fantastic. If I hadn't JUST made a spice cake (which we already polished off), I'd jump up and make this right now!

Thanks for hosting the link-up. Good stuff!

That's a very good tip for saving brewed coffee as ice cubes! Lovely cake - it's very similar to one I make, generally as a bundt cake. Thank you for sharing it with the Hearth and Soul hop.
