Frugal Food Thursday: Rosh Hashanah Apple Cake

So sorry to all my frugal food friends about not having Frugal Food Thursday for the past two weeks!  Things have been crazy here, between my children's activities, other projects, and the holidays (Happy Rosh Hashanah to those who celebrate!).

Here's what I made for dessert for the holidays this year.  Besides being yummy, it's also pretty cheap to make!

ROSH HASHANAH APPLE CAKE

1 cup margarine
1 cup sugar
4 eggs, well beaten
1 tsp vanilla
2 cups flour
2 tsp baking powder
1/4 tsp salt
1 tsp lemon juice
1/4 cup water
1 large Red Delicious apple
1 tbsp cinnamon
3 tbsp sugar

Preheat oven to 350 degrees. Cream together the margarine and the sugar.  Add the eggs and vanilla and mix well.  Add the flour, baking powder, and salt and mix until all ingredients are moistened.  Place batter in a greased 13x9 pan.

In a small bowl, mix the lemon juice with the water.  Core and slice the apple into thin slices.  Dip each apple slice into the lemon juice mixture to keep the apple from browning.  Place the apple slices on top of the cake batter in a decorative fashion.  Mix cinnamon and sugar together and sprinkle on top of the cake.

Bake at 350 degrees for 45 minutes, or until  the top is browned and a toothpick inserted in the cake comes out clean.  Allow to cool on a wire rack, then slice into squares.

I shared my easy homemade tartar sauce recipe this week which can be made a variety of ways.

The apple cake looks yummy! I'll have to add it to my list of desserts for Sundays.

I made an apple cake also but I have not blogged it. What I shared, this week, is the most amazing side dish, rice with mangoes, bananas and apples....some raisins too.

My kids and I are reading the book Farmer Boy and made one of Almonzo's favorite recipes the other day for lunch: Fried Apples-n-Onions! YUM!!
