Frugal Food Thursday: Gazpacho

Here's a great way to use up the cheap (or free, if you grew a garden) summer produce!

This recipe is courtesy of my mom's cookbook.  A few years ago, she compiled all her recipes and gave copies to her daughters and daughter-in-law.  I love having it as a resource when I can't figure out what to make!

GAZPACHO

2 large tomatoes, peeled (here's how to peel a tomato)
1 large cucumber, peeled
1 medium onion
1 green pepper
24 oz tomato juice
1/4 cup olive oil
1/4 cup red wine vinegar
1/4 tsp Tabasco sauce (or more if you like it hotter)
1 tsp salt
1/4 tsp pepper
2 garlic cloves, minced
croutons for garnish

In an electric blender or food processor, combine tomato, cucumber, onion, green pepper, garlic, and 1/2 cup tomato juice.  Blend at high speed for 30 seconds to puree.

In a large bowl, mix the pureed vegetables with the remaining tomato juice, olive oil, vinegar, Tabasco, salt, and pepper

Refrigerate mixture, covered, until well chilled, about 2 hours.  Serve in bowls with croutons. Makes 6 servings.

I am feeling guilty. I really don't think my blueberry pecan ice cream is frugal but it is so good.
