Menu Plan 4/4/11: Produce and more produce

This week, we have lots of produce in the house, thanks to a trip to ALDI for cheap fruit and a discovery of a 99¢ produce store with a 50% day on Fridays.  So now we have lots of produce in the house.  And hopefully this will be a permanent occurrence!  I'm so glad we'll be able to base more meals around fresh vegetables, and snack on more fruit.

Of course, now that we have all this produce in the house, we need to use it up!  It would be a waste of money to buy all this food, even for cheap, and not use it.  What's your favorite way to use up fresh produce?

Here are our plans:

Monday - macaroni with meat sauce (with peppers, onions, and mushrooms), salad

Tuesday - chicken with snow peas (and lots of other veggies), brown rice

Wednesday - pepper and tomato pizza on whole wheat pizza dough, fruit

Thursday - Clean out the Crisper Pasta and Vegetables, salad

Friday - chili with beans and peppers over brown rice, salad, challah

Saturday - macaroni and cheese in the crockpot

Sunday - eat out!

We are having clean out the crisper pasta tonite too but I call it Pasta Primavera to be fancy.
