Menu Plan 3/7/11: Still lovin' those Italian Days deals

This week, I'm continuing to use up all the great grocery deals during the Publix Italian Days.  Lots of pasta, beans, and tomato-based recipes will be made.  Yum!  We're running out of red meat in the house (I buy from a kosher supermarket once every couple of months), so we'll be depending on fish, chicken, and beans for protein foods this week.

Here's what's for dinner this week:

Monday - chicken stir-fry over brown rice

Tuesday - salmon fillets, fresh fettuccine with garlic and oil, salad

Wednesday - mushroom pizza on whole wheat pizza dough, fruit

Thursday - veggie chili over penne pasta

Friday - chicken soup with matzo balls, Balsamic Chicken, rice, salad, challah

Saturday - homemade macaroni and cheese, salad

Sunday - takeout!

Great looking menu! The Balsamic Chicken looks very interesting. We eat a lot of chicken, and I'm always on the look out for more good recipes. Thanks for sharing!
