Menu Plan 1/24/11: Last week of the challenge!

Time for the fourth and last menu plan for the Clean Out the Cupboards Challenge!  I'm planning meals to use up my excess inventory in my pantry, freezer, and refrigerator, as are my four co-hosting bloggers and lots of other folks as well!  Please join us!


The pantry, fridge, and freezer is getting emptier and emptier, but I think I can get another week of meals out of what I have.  I'm allowing myself to buy dairy and produce items, so many of my meals will be based on that.  Also, I'll be using up some of the food I made during Freezer Cooking Days earlier this month.

One of my most successful dishes has been chicken baked in salad dressing.  It's not the most amazing culinary feat, but it tastes pretty good to me.  I had nine, count 'em, nine open bottles of salad dressing in the fridge door at the beginning of the month, and now it's down to six.

Somehow I managed to not make the steak fajitas last week, so that's moving to this week's menu.  Actually, because of a lack of variety due to the emptying cupboards, I'll be repeating a few meals this week.  I promise more variety in the coming weeks!

And here's what's for dinner this week:

Monday - steak fajitas with peppers and onions

Tuesday - kidney bean chili over pasta, cut-up veggies

Wednesday - mushroom pizza on whole wheat pizza dough, fruit

Thursday - balsamic chicken, pasta, salad

Friday - chicken soup with matzo balls, ground beef in tomato sauce with peppers and onions, brown rice, challah

Saturday - eating out!

Sunday - banana pancakes

Looks like your still eating pretty good this week even though it's the last week of your challenge. We're continuing our challenge into Feb because we're just starting to see a bit of a difference in our pantry.
