Menu Plan 1/10/11: Using it up!

It's the first menu plan of the year, and the second menu plan for the Clean Out the Cupboards Challenge!

I'm planning meals to use up my excess inventory in my pantry, freezer, and refrigerator, as are my four co-hosting bloggers and lots of other folks as well!  Please join us!

Last week's menu really helped me get rid of some of the items out of my pantry - I stuck to my plan and was able to use up some items that had been sitting a while.  For instance, I had bought frozen blueberries many months ago, and had half a package open.  I ended up making a blueberry-banana sauce to top French toast with.  It was delicious, and helped clean out the cupboards to boot!  And if I hadn't put that in my plan, it probably would have been forgotten.

This week, I'll continue to use up excess stuff that's in my pantry. 

And here's what's for dinner this week:

Monday - tilapia fillets, Romaine and Orange Salad

Tuesday - meatballs and whole wheat spaghetti, spinach salad

Wednesday - mushroom pizza on whole wheat pizza dough, fruit

Thursday - 3 Can Veggie Chili over whole-wheat pasta

Friday - chicken soup with matzo balls, chicken breasts baked in salad dressing, rice pilaf mix, salad, challah

Saturday - steak fajitas with all the trimmings

Sunday - takeout!
