Snickerdoodles

My favorite cookie is, hands down, chocolate chip.  I love them.  It's no wonder that my favorite Sesame Street character was Cookie Monster.

But, now that I'm trying to save money, I don't automatically buy chocolate chips when I want to make cookies.  Unfortunately, they can be very expensive, and don't go on sale that often.  So I limit my purchases to when I have a coupon (like last week, when I had a Target store catalina coupon that I received while checking out the week before).  So I'm always on the lookout for other types of cookie recipes.

Here's a snickerdoodles recipe I modified a bit from one I found online.  With the flavorings limited to sugar, vanilla, and cinnamon, it's pretty cheap.  I bought several bottles of vanilla cheap when my local Albertsons closed, and recently bought more at a buy one, get one free sale at Winn-Dixie.

Snickerdoodles

2-1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
2 stick butter, room temperature
1-1/2 cups sugar
2 eggs
1 tsp vanilla
2 tbsp sugar
2 tbsp cinnamon

Preheat oven to 350.  In a medium mixing bowl, sift together flour, baking powder, and salt.  In a separate large bowl, mix butter and sugar until fluffy.  Add eggs and vanilla and stir.  Gradually add in flour mixture.

In a small bowl, mix remaining sugar and cinnamon.  Shape dough into small balls and roll balls in the cinnamon-sugar mixture.  Place on baking sheets.  Bake cookies for 10-11 minutes.  Let cookies cool for 1 minute, then remove and cool on wire racks.

I just made some of these recently and forgot how good they are! They're super cheap to make like you said and how can you resist cinnamon and sugar?! : )

I'm just like you in that I also find myself limiting my chocolate chip buys to just a couple times a year. Other times, I make cookies that don't require something so expensive. Way to satisfy your sweet fix without breaking the bank. These are my kids favorite cookies, now that I have this recipe I don't have to keep getting disappointed going to the store looking for them....
