Pizza Margherita (Frugal Food Thursday)

Before a friend went on a three-week vacation, she gave me a potted plant that she had in her kitchen.  It was a basil plant.

Now, I've tried to grow vegetables and herbs at my house before, and let's just say that my thumb is definitely not green.  Things start growing, and then something happens: usually, the bugs find the plants, or the plants get diseases, or worms find them, or I get distracted and forget to water them.  Okay, that last one is definitely my fault.  But, basically, I have tried to grow veggies and herbs and not been particularly successful at it.

But this basil plant managed to grow, and grow, and grow!  I don't know what exactly I did, but this time it worked.  Maybe because it was in a pot placed on concrete, avoiding the bugs from the ground.  Or maybe I was just lucky this time.

In any event, I harvested a bunch of basil from the plant a few days ago.  I made my usual weekly pizza, but used tomato, mozzarella cheese, and the basil to make a Pizza Margherita.

Here's the recipe:

PIZZA MARGHERITA

1 recipe whole wheat pizza dough
4 plum tomatoes, sliced
36 basil leaves
4 oz shredded mozzarella cheese
2 tbsp olive oil
2 tsp freshly ground black pepper
dash of salt

Make the pizza dough according to the linked recipe.  Roll out into two 9x13 rectangles and place in two 9x13 pans.  Bake at 450 degrees for 6 minutes.  Remove the pizza dough from the oven, leaving the oven on.

Place the tomato slices on the two pizzas.  Cover each tomato slice with a basil leaf.  Spread half the mozzarella cheese on each of the two pizzas.  Drizzle with olive oil and add the pepper and salt to the tops of each pizza. 

Return the pizzas to the oven and bake for another 6 minutes.

Makes 2 9x13 pizzas.
