Fried Cinnamon Bites - Celebrate the Holidays with Pillsbury® Cinnamon Rolls!


Thanks to Pillsbury for providing a free coupon for the cinnamon rolls used in this recipe!

My family is celebrating Chanukah right now, and one of the ways we celebrating is by eating fried foods!  The oil that the food is fried in helps us remember the miracle of the oil in the Chanukah story.  When the Temple was restored, there was only enough oil to light the holy lamp for one night, but instead, the oil lasted for eight nights, enough time for more holy oil to be made.

The food usually associated with Chanukah is potato latkes, pancakes made with shredded potato.  But we decided to put a modern spin on Chanukah by making fried cinnamon rolls!

Making them was pretty simple.  First, I opened a can of Pillsbury® Cinnamon Rolls.  I rolled flat each cinnamon roll, then cut them in half.  I heated some canola oil in a pot on the stove, put in the cinnamon roll halves, and cooked them until they were golden brown on both sides.

After draining the rolls on a wire rack above paper towels, I placed them on a plate and added some powdered sugar.  My daughter used blue icing to decorate them and make them more festive!

Walgreens & CVS Black Friday Shopping


You might think, given that I love getting great deals, that Black Friday would be my favorite day of the year.

But you'd be wrong.  Yes, I love getting great deals, but I hate crowds, lines, and searching for parking spots.  So I'd rather skip the Black Friday sales.  More for the rest of you!

But I did make quick stops to get a few deals at CVS and Walgreens, along with my regular trip to Publix.  I was disappointed with the deals at the drug stores - seems like in years gone by that the deals were a lot better.  Or maybe I've just become pickier.

 I haven't shopped much at CVS and Walgreens this year, so I didn't have any Register Rewards or Extra Care Bucks to use to make the deals even sweeter.  But I think I did okay.

Here's what I got:

Carbonell Olive Oil Prize Pack Giveaway


A while back, I had the chance to make one of my favorite recipes, Chicken Basquaise, with the addition of Carbonell Spanish Olive Oil!

Much like Spanish wine, Spanish olive oil offers a distinctively different flavor that liberates meat, fish and vegetable dishes from the confines of traditional, expected taste. Carbonell olive oil, since 1866, is only produced and bottled in Spain. Its quality and tradition have made it one of the preferred brands all over the world.  Carbonell Extra Virgin olive oil has an intense flavor that is delicious in salads or as a base for dips, dressings and as a seasoning in many dishes.

And here's another great recipe using Carbonell olive oil - Apple and Mango Marinated Chicken!


APPLE AND MANGO MARINATED CHICKEN

Ingredients:

1/2 cup Carbonell Extra Light Olive Oil
4 cleaned free-range, boneless chicken breasts (cut into 3-inch strips)
2 cups fresh apple cider
2 cups mango juice or your favorite equivalent (guava, pineapple or blend)
1 tbsp. black pepper
1 tbsp. kosher salt
additional kosher salt and black pepper for seasoning
after the marinating process

Directions:

1. Remove any fat and cartilage from the chicken breast and cut into small 3-inch strips.

2. In a medium-sized bowl, whisk together juices, salt, pepper and Carbonell Extra Light Olive Oil.

3. In a glass baking dish, container or resealable plastic bag, lay the strips of chicken in the marinade and let them sit overnight for maximum results.

4. Remove the chicken from marinade and season both sides of the chicken with a pinch of kosher salt and black pepper (50/50 blend).

5. Heat outdoor or indoor grill to high and place strips on it, quickly grilling each side. Do not overcook the chicken as these little strips will cook in about 3-5 minutes total cooking time (remember some of the acids from the juices have broken down the chicken already).

6. Remove cooked chicken from the grill and place in a new clean container.

7. Cover with plastic wrap or foil and let chicken rest (it will continue to cook slightly). Serve over a simple salad or roasted corn salad.

Publix: Amazing shopping week - saved 84%!


Wow, what an amazing shopping week at Publix! I ended up passing on several great deals but still did really well, saving 84%! I got free eggs and hummus as well as almost-free cake mix.

I didn't keep track of my running total as I shopped, but when I checked out, I found my pre-coupon total was $50.23 - perfect for using the $10 off $50 Target coupon in last Sunday's Target ad.  Wow, things were really going my way!

Bruschetta Boca Burger Pasta Sauce (Frugal Food Thursday)

It was a crazy day here at the Frugal Follies household - three daughters going in three different directions.  So I planned to make a quick dinner tonight - my 3 Can Veggie Chili.  But when I got to the pantry, I found no canned beans anywhere.  Guess I know what I'll be buying tomorrow at ALDI!

But, that left me without a plan for dinner.  So I looked in the freezer and found a box of Boca Burgers that I had bought when they were on a BOGO sale at Publix a couple of months ago.

Specifically, I had the Bruschetta variety - with tomato, basil, and Parmesan.  So I thought, why not cook the patties, then crumble them into a tomato sauce and serve it over pasta?

So that's exactly what I did - and the results were delicious!  I was concerned about the sauce having too many carbs, but a quick look at the nutrition label showed me that each has 8 grams of carbs, 5 of which are fiber.  So no worries there! (And no, this isn't a paid endorsement - I just really liked the product!)

I used a yellow bell pepper because I found it cheaply at ALDI last week, but of course, you can substitute a green pepper instead!
