Cannellini and Feta Casserole (Frugal Food Thursday)

Because of all the great deals at the Viva Italia sale at Publix this week, my cupboards are bursting at the seams with beans and bread crumbs. There's lots of feta cheese and a few trays of colored peppers in the fridge.

I wanted to make something with all of this, but what? I did some Googling and came across this recipe for Nopa's White Beans with Feta.  I decided to add some onions and peppers and adjusted the proportions a bit.

It was divine!  I loved how all of the different ingredients came together - the warmed beans, slightly melted feta, and toasted breadcrumbs.  Next time, though, I'd add a bunch of garlic!

          Boar’s Head Heart-Healthy Deli Meats Review

          February is American Heart Month.  That might get you thinking of those heart-shaped boxes of candy for Valentine's Day, but you should also be thinking about your own heart, and how to keep it healthy.

          According to the CDC, lowering you blood pressure and cholesterol will reduce your risk of dying of heart disease.   One suggestion that they have to help your heart's health is to eat a healthy diet that is low in salt; low in total fat, saturated fat, and cholesterol.

          Coupon organization tip / $1000 cash giveaway

          You know I love coupons, right?  You probably think that I spend hours and hours clipping and filing them, right?

          Nope!

          Instead, I file my newspaper coupon inserts without cutting them at all!

          Here's how I do it:



          The coupon insert filing drawer is located on the bottom drawer of a 5-drawer filing cabinet that we got for free.  In the drawer are 20 hanging files.

          The first hanging file contains non-newspaper coupons. The rest of the hanging files hold coupon inserts for each week, in reverse chronological order, with the most recent inserts first and the older ones toward the back.  I do this because I'm more likely to use coupons that have been recently issued, as the older inserts contain many expired coupons, but possibly still some usable ones.

          In each file I have inserts I get in my local major newspaper as well as the inserts from two free local newspapers in my area.  I'm usually able to pick up 4-6 free copies of each of the two newspapers each weekend.

          When I get the inserts, I don't cut out the coupons; instead, I just file them in the drawer, uncut. 

          Then, when I plan my shopping trip, I find the coupons I need in my coupon database or on other coupon matchup sites.  I pull out the insert I need, flip through the pages, find the coupon, and cut it out.

          Each week, I remove the inserts from the last file, throw them away, change the date on the tab to the current date, put the new inserts in, and put the file at the front of the filing drawer.  It only takes a few minutes.

          And that's how I organize my coupons!

              Ruth's Brownie Zingers Review

              We here at the Frugal Follies household - well, except maybe for Mr. Frugal Follies - have a bit of a sweet tooth.

              And when I say "a bit," I mean, any chocolate that manages to make it in the house is gone almost instantly.

              So when Ruth's Brownie Kitchen, a small artisan bakery located in New York's Hudson Valley, asked me to give their Ruth's Brownie Zingers a try, well, that was pretty much a no-brainer.  Of course we would!

              Ruth's Brownie Zingers are the very best part of Ruth's Brownie Kitchen's legendary brownies... the crunchy, cookie like tops. Like all of Ruth's ultra-premium baked goods, Ruth's Zingers are handcrafted-to-order using Ruth's secret blend of three different Valrhona chocolates. Zingers are available in three varieties: chocolate chunk, walnut and toffee crunch.

              Ruth's Brownie Zingers were recently taste-tested by the staff of the New York Times.  Check out how they did:
              Members of the Dining section staff held an informal tasting to compare the chocolate chip and toffee flavors of all three companies. Ruth’s Brownie Zinger’s toffee crunch was the clear winner in its category, though Brownie Brittle got a couple of votes for that flavor.               We were lucky enough to be able to try all three varieties of Brownie Zingers.  They arrived in a bubblegum-pink gift box, tied up in pink bows - perfect for giving as a gift.

              Don't expect soft, moist brownies when you get them.  Ruth's Brownie Zingers are toasted brownie tops, and thus are more like cookies than brownies.  They are baked in large sheets and broken into pieces, so no two pieces are exactly the same shape. 


              My tasting team (i.e., my three daughters) dove into the Chocolate Chunk variety.  They were crunchy and sweet, and big slabs of chocolate on top.  Yum!   My eldest daughter said, "This chocolate is so good... I... I..." and then couldn't finish her sentence.  Probably because she ate another one!


              Next was the toffee.  The small bits of toffee were sprinkled generously on the top of the Brownie Zingers.  Everyone like this one too, although I thought the toffee flavor could have been a little stronger.  When I asked my eldest for a reaction, she said, "Can't talk. Eating."


              And lastly, the walnut brownies.  My youngest didn't want to try them because of the nuts, which left more for the rest of us!  My eldest daughter said about them in a British accent, "It is the perfect combination of nutty goodness and chocolate delight."

              On the down side, obviously, those families with nut allergies should unfortunately avoid the Zingers.  And because the Zinger pieces are broken up, I found lots of brownie crumbs, toffee chunks, and walnuts at the bottoms of the bags.  But they would be good for using as a topping for ice cream, I think.

              Overall, we really loved Ruth's Brownie Zingers, and I think they would make a great gift for the chocoholic in your life!

              Menu plan 2-25-13: Lots of fresh pasta


              At Publix last week, by combining a sale with coupons,  I was able to purchase six packages of fresh pasta for only 15¢ each!

              So those will be featured in this week's recipes.  One night I'll make meatballs and serve them with fresh linguini.  Another night, I'll make one of my favorite dishes, fettuccine Alfredo!

              Here's this week's plan:

              Monday - linguini and meatballs

              Tuesday  - potato-crusted cod, salad

              Wednesday - White Beans with Peppers over brown rice

              Thursday - pizza bagels, fruit

              Friday - Chicken Broth with Matzo Balls, baked chicken, salad, challah
