Thanksgiving Yam Casserole (Frugal Food Thursday)

Welcome to Frugal Food Thursday!  If you have a great frugal recipe, please link up below!

Can you believe that Thanksgiving is only two weeks away?  Like we often say about the Jewish holidays, it seems that Thanksgiving is falling early this year!

Here's one of my all-time favorite Thanksgiving recipes.  I love the combination of the sweet potatoes and pineapple in the casserole, and the brown sugar-glazed Special K pieces on top are to die for!

Here's the recipe:

3 lbs. whole sweet potatoes
8 oz crushed pineapple, undrained
1/4 tsp nutmeg
1/4 tsp ginger
1/2 tsp cinnamon
2 tbsp brown sugar
1/4 cup butter or margarine, melted

Crunchy topping:
1/3 cup brown sugar
1/2 cup butter or margarine, melted
2 cups Special K cereal
1 tsp cinnamon

Preheat the oven to 350 degrees.  Wash sweet potatoes, removing any eyes.  Prick sweet potatoes several times each with a fork. Microwave for 12 minutes, turning sweet potatoes over halfway through.  Allow sweet potatoes to cool, then remove skins from the flesh and put in a large mixing bowl.  Mash the sweet potato flesh with a potato masher.

Add pineapple, spices, sugar, and butter or margarine and mix well.  Place mixture in a 9x9 casserole dish.

Make crunchy topping: In a medium bowl, mix brown sugar, melted butter or margarine, and Special K together until the cereal pieces are coated.  Spread the crunchy topping evenly on top of the sweet potato mixture.  Sprinkle with cinnamon

Bake for 30 minutes, uncovered, or until the topping is brown and crisp.

Wow! That's almost the recipe my sil uses to make her sweet potato casserole. I think she skips the cereal topping.

I'm doing a Thanksgiving Side Dish linky at my blog today. I would love for you to link this up!

Your recipe looks delicious. I've been hunting for Thanksgiving recipes and this one looks perfect. The pineapple really makes it stand out from a traditional yam or sweet potato dish. Thanks for sharing with Hearth and Soul.

This looks yummy! I'm always on the hunt for a really good yam recipe - I'll have to give this one a try! I'd love for you to share this at Tuesday's Table for the Holidays -

I've never seen pineapple in yam casserole, but it sounds like it'd be a good combo. :) Thanks for sharing!
