Brown Rice with Caramelized Onions and Cranberries (Frugal Food Thursday)

Here's one of the foods that will grace our holiday table: Brown Rice with Caramelized Onions and Cranberries. It's easy to make ahead of time and yummy to eat!

Here's the recipe:


BROWN RICE WITH CARAMELIZED ONIONS AND CRANBERRIES

2-1/2 cups vegetable broth
1 cup uncooked brown rice
3 tbsp. margarine
3 medium onions, sliced
2 tsp. brown sugar
1 cup dried cranberries

Combine vegetable broth and rice in a medium saucepan. Bring to a boil, then reduce to low heat. Cover and simmer 45 minutes, or until liquid is absorbed and rice is tender. Meanwhile, melt margarine in a medium skillet over medium-high heat. Add onions and brown sugar. Cook 6-7 minutes or until the liquid is absorbed. Reduce heat to low and continue to cook onions, stirring often, for 25 minutes or until onions are a caramel color. Stir in dried cranberries, then cover and cook over low heat for 10 minutes or until cranberries swell. Fold cranberry/onion mixture into cooked rice.

Serves 6 as a side dish.

Sounds great! I can't digest onions, but I like rice and cranberries, so I wonder how I can tweak this to have more flavor? I'll have to experiment, but I love the idea. Thanks for linking to Food on Fridays.

I struggle to like brown rice but the addition of cranberries sounds worth trying. Thank you for the recipe!
