Menu plan 10/31/11: Boo!

It's Halloween!  So for dinner on Monday I'll make something ahead of time, then quickly heat it up in between early trick-or-treaters and getting my own kids ready.  A casserole fits the bill!

Here's what's for dinner this week:

Monday - Mom's Mac and Cheese, salad

Tuesday - 3 Can Veggie Chili over brown rice

Wednesday - baked salmon with 7-Spice Seasoning, salad

Thursday - mushroom whole-wheat pizza

Friday - chicken soup with matzah balls, baked chicken breasts, tabbouleh, salad, challah

Saturday - Whole Wheat Waffles, fruit

Sunday - takeout!

Walgreens: Editing my shopping list mid-store

I took a trip over to Walgreens today. The ad was filled with good deals, and I planned to get a whole lot of them. But as I shopped, I started realizing that though the deals were good, I was going to end up with a huge out of pocket cost. I would have received a lot of Register Rewards, but I'd have to put the money out because I had no RRs to pay with. That's one of the side effects of barely doing any drug store shopping for past several weeks.

So, I ended up putting a few deals back. Here's what I ended up with:

CVS: Not-so-extreme shopping

Today at CVS, there was a very good price on laundry detergent: $1.49 for a 28-load bottle of Xtra laundry detergent. So how many did I buy? 20? 30?

Nope, just 2.

You see, I know that this price will come back, and I already have two bottles in my stockpile. So I bought two more, because I think that before I use up those four bottles, they will go on sale for $1.49 again.

Now, had it been free after coupons, I might have bought a few more bottles.  But not any more than I could store.  There is such a thing as too much of a good thing!

ALDI: Drinking milk like water

My kids are drinking milk like it was water! A few days ago I bought two gallons of milk at ALDI - best price in the area at $2.79 a gallon - and now they're almost gone. I had to make a special trip to make sure there was enough milk for breakfast tomorrow! While there, I also picked up some salad veggies and a couple of other things.

Elevate Your Finances in 2011 - September/October update

Welcome to Elevate Your Finances in 2011!

It's way, way, way past time to update my financial goals, which I posted at the beginning of the year. But better late than never!

My main financial goal is to pay off 50% of the balance (as of 12/31/10) of our home equity line this year.

In September and October, we made some small payments toward the goal.  We're still not able to put large chunks of cash as I had hoped due to unforeseen expenses, like my computer dying.  So far this year, we've paid off 13% of the amount.

I was also able to get my files in order this month, which was another of my minor goals for the year.  Now I can find all of our financial paperwork quickly, which is a real relief.

What I do to earn Swagbucks

Friday is Mega Swagbucks Day, where you can get lots of Swagbucks just for doing searches! (Do searches the easy way with the Swagbucks toolbar, or use your Android phone.) You can also earn Swagbucks for finding Swagcodes, answering polls and surveys, filling out profiles, watching videos and Swagbucks TV, trading in media items, doing tasks, and considering special offers and no-obligation special offers.

Here's what I do each day in order to earn Swag Bucks:

Morning:

  • Do the daily poll - earn 1 Swag Buck
  • Refresh the toolbar - earn 1 Swag Buck
  • Check out the no-obligation special offers - earn 2 Swag Bucks
  • See if there are any videos or short tasks in the ad box on the main page just above "Recently Earned" - these can range from 1 to 10 Swag Bucks
  • Watch any videos or do tasks listed on the main page under "Complete Special Offers and Earn Swag Bucks" - anywhere from 1 to 3 Swag Bucks each
Throughout the day:
  • Do searches using the Swagbuck toolbar - every so often I'll earn anywhere from 7 to 12 Swag Bucks - or more on Mega Swagbucks Day!
  • Watch Swagbucks TV - earn 3 Swag Bucks for every 10 videos.  (I have my speakers on mute and click to another window after I've started the video.)
  • Check the Swagbucks Facebook page and the Swagbucks blog for any Swag Code searches.
When I have time:
  • Fill out surveys - anywhere from 25 to 250 Swag Bucks per completed survey.
  • Go through the different Special Offers and watch videos or do small tasks.
I find I can earn enough points for an $5 Amazon.com gift card every 10 days or so by doing these activities.  If I put more time into it, I'm sure I could earn a lot more!

Free chips and queso from Chili's!

I admit it.. I like to eat out.

It's probably not the best thing for my budget.  I could save more, and have healthier meals, if I cooked similar food at home.  But, it's one spendthrift habit that I still have.

When I do look for restaurants, I look for family-friendly places that have a healthy kids' menu, and that are fairly low in cost.  One place we do hit on occasion is Chili's.  So I was really excited to find this free coupon for chips and queso.  Once you've signed up for their mailing list, you'll be prompted to print the free coupon.

I'd recommend creating a separate email address for this and other types of online offers.  That way, the newsletters and other offers don't overwhelm your regular email.

Publix: Procrastinating and couponing

Sometimes, procrastinating can be good for couponing. You might plan to go grocery shopping on a Thursday, to get the new week's deals, but then procrastinate and decide to go on Monday. But then a coupon for a product you want shows up in Sunday's paper. So you can use the coupon and get the deal! (Of course, you could check the Sunday Coupon Preview to see what's coming up.)

But more likely, procrastination is bad for couponing.  You might put off shopping until the last day of a sale, then have a personal or family emergency and not be able to go.  Or, you might plan out a great trip, wait a few days to go, and then discover that some of your deals won't work because the coupons have expired!

That's what happened to me this week.  I planned to go shopping last Thursday, but then didn't end up going until yesterday.  There was a good deal on Special K that I was hoping to snag because we are almost out of cold cereal, and I won't pay more than $1.50 per box.  But when I checked my coupons before checking out, I discovered that the coupons had expired on Sunday.  Aargh!

Despite the procrastination (and computer and printer problems), I was still able to get a few good deals at Publix this week.  Here's what I got:

ALDI: More stuff than usual

I took a trip over to ALDI yesterday. Since I haven't been doing as much couponing lately (due to my computer problems and a bit of laziness), I've run out of items that I usually buy with coupons, such as crackers and instant oatmeal. Since I needed those items, I chose to buy them here at ALDI, which generally has the lowest regular prices in my area.

ALDI had a great price on Red Delicious and Golden Delicious apples - $1.59 for three pounds. I bought a bag of each.  There are lots of yummy apple recipes in our future, I think!

Manilla - organize your household accounts!

I pay bills every two weeks. As bills come in, I put them in a specific mail holder in the kitchen. When it's time to pay bills, I sit down and make a spreadsheet of all of our income for the two weeks, all of our current and projected expenses, and all of the money we want to save for various goals. Then it's a matter of setting priorities to make sure that everything balances out!

This system works for me, but maybe you're looking for a way to organize your accounts and bill paying. You might like to give Manilla a try.

CVS: Sweet!

Frugal Food Thursday: Honey Cake

Here's a recipe for honey cake that I made for the Jewish holidays this year. It is nice and moist, and the kids all asked for seconds. And the leftovers stayed moist, too! Give it a try!

This is my mom's recipe. She makes it in a 9x13 pan, but I decided to use a 9x5 loaf pan instead, and serve it as slices instead of squares. Works either way!

From a frugal perspective, if you don't have all the spices listed, don't worry about it; just leave one or two of them out. It will still be tasty. And save some leftover coffee for this recipe! You can freeze leftover coffee in ice trays, then defrost the coffee ice cubes in the microwave.

HONEY CAKE

3 eggs
1 cup sugar
1 cup honey
1/4 cup canola oil
2-1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp allspice
1/2 tsp cinnamon
1/8 tsp nutmeg
1/4 tsp ginger
1/2 cup cold coffee

Preheat oven to 350 degrees. In a medium mixing bowl, mix the flour, baking powder, baking soda, and spices. To the egg mixture add half the flour mixture, then half the coffee, then the second half of the flour, and lastly the second half of the coffee. Mix well.

Spray cooking spray on a 9x5 loaf pan. Line with waxed paper and spray cooking spray on the paper. Pour batter into the pan and bake at 350 degrees for 30 minutes. Cover loaf with aluminum foil and bake for another 30 minutes or until a toothpick inserted in the loaf comes out clean.
