Frugal Food Thursday: Rosh Hashanah Apple Cake

So sorry to all my frugal food friends about not having Frugal Food Thursday for the past two weeks!  Things have been crazy here, between my children's activities, other projects, and the holidays (Happy Rosh Hashanah to those who celebrate!).

Here's what I made for dessert for the holidays this year.  Besides being yummy, it's also pretty cheap to make!

ROSH HASHANAH APPLE CAKE

1 cup margarine
1 cup sugar
4 eggs, well beaten
1 tsp vanilla
2 cups flour
2 tsp baking powder
1/4 tsp salt
1 tsp lemon juice
1/4 cup water
1 large Red Delicious apple
1 tbsp cinnamon
3 tbsp sugar

Preheat oven to 350 degrees. Cream together the margarine and the sugar.  Add the eggs and vanilla and mix well.  Add the flour, baking powder, and salt and mix until all ingredients are moistened.  Place batter in a greased 13x9 pan.

In a small bowl, mix the lemon juice with the water.  Core and slice the apple into thin slices.  Dip each apple slice into the lemon juice mixture to keep the apple from browning.  Place the apple slices on top of the cake batter in a decorative fashion.  Mix cinnamon and sugar together and sprinkle on top of the cake.

Bake at 350 degrees for 45 minutes, or until  the top is browned and a toothpick inserted in the cake comes out clean.  Allow to cool on a wire rack, then slice into squares.

CVS: Where's my bucks?

After skipping CVS last week, I took a trip over yesterday. One of the deals I wanted was this one:

Spend $10, receive $5 ECB:
Scope Dual Blast, Scope Outlast mouthwash 750mL, Crest Complete 4-5.8 oz or Oral-B Fresh Scent toothbrush 1 ct

I purchased 3 Crest Complete toothpastes, 4.4 oz, which retailed for $3.39 at my store, for a total of $10.17. I used 3 $2 off Crest Complete coupons from the 9/11 Smartsource insert. So I spent $4.17, and should have received a $5 ECB, thus making money on this deal.

But.. my ECBs didn't print! Did I do something wrong? I will be headed over to the store to ask about this.

Here's the rundown of the deals I got:



2 Softsoap body wash @ $3.00 = $6.00 (receive $4 ECB)

1 Xtra laundry detergent @ $1.49

3 Crest Complete toothpaste @ $3.39 = $10.17 (should have received $5 ECB)
- 3 $2/1 Crest Complete Toothpaste, Scope Dual Blast Rinse, Oral-B Complete Floss, or Oral-B Complete Toothbrush, exp. 12/31/11 (SS 09/11/11 R)
= $4.17 for three, or $1.39 each (83¢ moneymaker after ECBs, or should've been)

Total out of pocket: $4.60

Friday shopping: Publix, ALDI, and the produce store

I went a little AWOL this week... sorry! I did do my normal grocery shopping on Friday, but didn't get a chance to blog about it. So here's what I got this week at the grocery stores:

At Publix, I picked up four boxes of Honey Nut Cheerios.  I had a raincheck from a sale two weeks ago, and I also had Publix and manufacturer's coupons.  I also picked up some items for Rosh Hashanah that were on sale, but for which I did not have coupons.



4 Honey Nut Cheerios, 21.6 oz, @ $2.99 (with raincheck) = $11.96
- 4 $2/1 Cheerios (Honey Nut), Cinnamon Toast Crunch or Lucky Charms, exp. 9/30/11 (Publix Yellow Advantage)

At ALDI, I picked up the usual perishable items.

The pickings at the produce store still are pretty slim - but they should be getting better as the Florida farming season ramps up in October.  I hope, anyway.

Menu plan 9/26/11: L'shanah tovah tikatevu!

This Thursday and Friday is Rosh Hashanah!  So we will have two large festive meals on Wednesday and Thursday night.  We are going to our relatives' house on Wednesday night, so I'll only be bringing salad and dessert.  Thursday, I'll be making a large dinner.  So Friday night, usually my biggest meal of the week, will end up being pretty simple.

So here's what's for dinner this week:

Monday - salmon with 7 spice seasoning over salad

Tuesday - ravioli, Caesar salad

Wednesday - dinner at relatives - bring salad and dessert

Thursday - chicken soup with matzah balls, baked chicken, kasha varnishkes, salad, challah, apple cake

Friday - leftovers from Wednesday and Thursday night

Saturday - grilled cheese with tomato soup

Sunday - sub sandwiches

Menu plan 9/19/11: I feel like chicken tonight!

Last week, I didn't have much meat in the house.  But on Friday, I made a run to the kosher butcher and picked up two whole chickens and a family pack of chicken breasts.  So now I feel like chicken tonight! Remember this old commercial?

So here's what's for dinner this week:

Monday - chicken breasts with tomato sauce over spaghetti, salad

Tuesday - veggie burritos, rice with salsa and cheese

Wednesday - hot dogs, cut-up veggies, pickles

Thursday - tuna noodle casserole, salad

Friday - chicken soup with matzah balls, baked chicken, kasha varnishkes, salad, challah

Elevate Your Finances in 2011 - August update

Welcome to Elevate Your Finances in 2011!

It's well past time to update my financial goals, which I posted at the beginning of the year. But better late than never!

My main financial goal is to pay off 50% of the balance (as of 12/31/10) of our home equity line this year.

In August, we were able to make a nice-sized payment on the debt, about 2% of the total amount owed as of the beginning of the year.  So far this year, we've paid off 11% of the amount. 

It's not looking good for reaching our goal of 50% for the end of the year, unless a significant windfall comes our way.  And that can happen!  But we're still making progress, little by little.

    Wednesday Weekly Shopping: Sorry for the delay!

    This last few weeks have been crazy!  I haven't had that much time to do couponing, and I haven't blogged about all my trips.

    But here's what I got last week:





    I also spent $23.74 at ALDI for milk, juice, spices, cheese, butter, produce, flour, and bread.

    Overall, this week I spent $64.16 for items which retail for $138.56, or a 54% savings based on the retail value of the products at the stores where they were purchased.  (But don't compare percentages!)  I didn't calculate my real savings this week.

    For the year (37 weeks), I've spent $2766.78 for items which retail for $5271.00, and saved $2504.22, or a 48% savings. That's an average of $74.78 spent each week for a family of five (husband, wife, and daughters ages 14, 10, and 6), including lots of fresh produce, dairy items, and kosher meat.

    Publix: Deals on pasta sauce, oil, and cereal

    I made two trips to Publix this week. On the first, I got some great deals on pasta sauce, oil, tea, and cereal bars. I went in a second time on a whim and picked up this great cereal deal, minus the manufacturer's coupons.

    First trip:


    8 Barilla pasta sauce @ BOGO $2.89 = $11.56

    =  $7.16 for eight, or 90¢ each

    Walgreens: Crestfallen, part 2

    I headed on over to Walgreens yesterday. There weren't all that many great deals to be had, but there were two good deals on Crest toothpaste, as well as one on Scott paper towels.

    For the second week in a row, though, all of the sales-priced toothpaste was gone when I got there early Sunday afternoon. And I got the last pack of Scott paper towels. Someone is raiding my store! I may have to go a little farther just to get some deals.

    Oh, well, here's what I did get:

    CVS: Another free product, yay!

    I took a trip over to CVS. As usual, I ran my card through the coupon printer at the front of the store. In the last two weeks, I received a coupon for a free product - two weeks ago, it was for Always pantiliners; last week it was for a Dove candy bar.

    And this week, I went three for three - I got a coupon for a free box of either Ritz Crackerfuls or Newton Fruit Thins!

    I preferred the Crackerfuls, but there were none on the shelves, so I went with the Newton Fruit Thins. They're thin cookies made with real fruit - the only flavor there was Cranberry Citrus Oat. I haven't tried them yet, but they look pretty good.

    So I paid $10.74 out of pocket and got back $10.79 in ECBs... so I made a nickel on this trip.  Yay!

    Menu plan 9/12/11: Not much meat

    There's not much meat in the house this week!  I really need to make another trip to the kosher butcher later on this week, once I start my new grocery budgeting week, to get more.  So we'll be stretching what we have to make the early week meals.

    I made a whole chicken for dinner last Friday.  Leftovers were made into chicken salad for a weekend lunch, and yesterday I made chicken soup with its carcass.  I was able to pick lots of bits of chicken after making the soup, so tonight's dinner will be a chicken stir-fry, with last week's vegetables and brown rice.  We still have a little ground beef in the freezer, so Tuesday I'll make a spaghetti sauce with it.  And on Wednesday, I'll make salads with some baked salmon that I have from ALDI.  Veggie chili on Thursday, and that will bring us to Friday, when I'll pick up some fresh meat for dinner!

    So here's what's for dinner this week:

    Monday - chicken stir-fry over brown rice

    Tuesday - beefaroni in tomato sauce, salad

    Wednesday - salmon with 7 spice seasoning over salad

    Thursday - 3 Can Veggie Chili over pasta

    Friday - chicken soup with matzah balls, breaded chicken breasts, salad, challah

    Saturday - veggie burritos with rice and salsa

    Sunday - sub sandwiches
