Frugal Food Thursday: Veggie Burritos

A couple of weeks ago, a reader asked what I make with all the tortillas I buy at ALDI.  Here's one of my recipes!

It's pretty simple veggie burrito recipe.  It's one of my go-to recipes when I need to make something really fast.  You can change out the veggies in the mixture and use whatever you have on hand.  You could add brown rice to the filling as well.  It's easy, cheap, filling, and delicious!

VEGGIE BURRITOS

2 tbsp olive oil
1 onion, chopped
2 stalks celery, chopped
1 green pepper, chopped
1 jalapeno pepper, minced finely
1/2 of a 14-oz can of tomatoes, drained
1/2 tbsp cumin
dash of kosher salt
1 15-oz can vegetarian refried beans
4 large flour tortillas
6 oz shredded pepper jack cheese
1 8-oz can tomato sauce
1 tbsp chili powder

In a large skillet, heat the oil on medium-high heat.  Add the onions and saute for 2-3 minutes, or until translucent.  Add the celery and saute for 2-3 minutes more.  Add the green pepper and jalapeno pepper and saute for another 1-2 minutes.  Sprinkle in the cumin and salt.  Add the drained tomatoes and heat through.

In a large bowl, mix the cooked veggies with the refried beans.  Put the tortillas on plates and spoon 1/4 of beans and veggies into each tortilla. Add 1 oz cheese on each tortilla.

Fold up the tortillas burrito-style - first fold the bottom and top, then roll up the sides.  Place seam side down on the plate.

In a small bowl, mix the tomato sauce with the chili powder.  Spoon the sauce over the 4 burritos.  Sprinkle 1/2 oz cheese on top of each tortilla.

Microwave burritos for 2 minutes, or until the cheese on top is melted.  Makes 4 burritos.

Wednesday Weekly Shopping: Lettuce save money!

Last week, I had gone over budget.  I pulled it in for this week, but just by a couple of bucks.  And I bought way too much lettuce!  I had bought romaine lettuce earlier this week, and then bought two heads of iceberg lettuce at the produce store on Monday. And then I found a great deal on bagged Italian salad at ALDI, so I bought four there.  Now we have a lot of lettuce.  Salad, anyone?

Here's what I got this week (click on the link below the picture for more details about the trip):

Overall, this week I spent $78.04 for items which retail for $117.65, or a 34% savings based on the retail value of the products at the stores where they were purchased.  (But don't compare percentages!)  My real savings (how much more I'd spend if I bought those items at the lowest possible regular price in my area) was approximately $23.36.

For the year (26 weeks), I've spent $1953.34 for items which retail for $3753.77, and saved $1800.43, or a 48% savings. That's an average of $75.13 spent each week for a family of five (husband, wife, and daughters ages 13, 10, and 6), including lots of fresh produce, dairy items, and kosher meat.

Why I shop the drug stores on Sunday

I couldn't make it to the drug stores on Sunday as we were visiting out-of-town friends who were in Florida on vacation. We had a wonderful time! But the drug store shopping had to wait until Monday.

And I was reminded why I make a special trip on Sunday to go to CVS and Walgreens - a few of the deals I had planned on getting were gone from the stores. I'll try again later on in the week, when the stores have restocked.

Here's what I got:


Walgreens:

1 Domino sugar @ $2.49 (with in-ad coupon)
- $0.50/1 Domino Granulated Sugar Product, exp. 9/30/11 (RP 06/26/11 R)
= $1.99 for 4 lb, or 50¢/lb  (slightly less than at ALDI, where sugar is $2.78 for 5 lb, or 56¢/lb)

2 Hefty One Zip quart bags @ BOGO $3.29 (with in-ad coupon)
- $1/2 Hefty Bags, exp. 7/31/11 (RP 04/10/11)
= $2.29 for two, or $1.15 each

2 Blue Diamond almonds @ BOGO $3.59
- 2 $0.50/1 Blue Diamond Product printable
= $2.59 for two, or $1.30 each

2 Stayfree pads @ $1.99 = $3.98
- B1G1 Stayfree Product, exp. 8/30/11 (SS 06/26/11)
= $1.99 for two, or $1.00 each

I also tried to use a $1 off Stayfree product coupon for the one that I didn't get free, but the cash register didn't let it through, and I didn't feel like having a big fight with the cashier over it.

Total spent: $9.30  (I didn't have any Register Rewards, and I didn't get any, either.  Bummer.)



CVS:

Lettuce eat more lettuce!

I wasn't able to do my regular Friday shopping at Publix, ALDI, and the produce store last Friday, as I was waiting for the air conditioning repairman to show up at my house. They finally did come and ah, our air conditioning is working again. But there was no time to shop then, or over the weekend, so Monday it was!

Since the produce store usually has cheaper lettuce that ALDI, I bought two heads of iceberg lettuce there.  Then I went to ALDI and found bags of Italian salad mix on sale for 50¢ each.  Well, I can't pass up a bargain like that!  So I bought four.  Let's just say that we'll be having a lot of salads here this week...

Here's what I got at those stops:



Publix:
4 Nutri-Grain bars @ BOGO $3.49 = $6.98
- 2 $1/2 Kellogg's Nutri-Grain Bars Target printable
= $4.98 for four, or $1.25 each

1 Cottonelle @ $3.99
- 50¢ off Cottonelle printable
= $3.49

2 Post Selects cereal @ BOGO $4.29
- 2 $1/1 Post Great Grains Cereal, exp. 7/18/11 (Blinkie)
= $2.29 for two, or $1.15 each

A note on that last one: I found two boxes of Post Select cereal with the Post Great Grains blinkie coupon glued onto the box, as if it were a peelie coupon, which was presumably done by Publix itself.  So I was in a quandary: do I use those coupons, even though they were for the wrong product, or do I take the coupons off (which I would never normally do with a peelie coupon) and get the right product?  As you can see, I chose the former.  I'm still not all that comfortable with my decision.

Tax: 24¢
Total spent: $11.00
Total saved compared to Publix full prices: $16.57




The produce store is having fewer and fewer bargains lately.  I spoke with one of the managers and he said that the local Florida farmers don't grow anything in the hot and humid summer, so most of the produce is being trucked in from outside the state.  Therefore, many of the prices there are higher than they used to be.  I only chose a few things and decided to get the rest of my produce at ALDI.

2 heads lettuce @ $1.19 = $2.38
1 gigantic cucumber @ 50¢
4 tomatoes @ 99¢/lb

Total spent: $4.01

Just a bit of shopping

After going over budget last week, I kept the shopping to a minimum this week.

I had several deals I wanted to get at Publix, but most of them needed coupons from the Summer Savings Booklet, which I hadn't found yet. I went to two different Publix stores and didn't find the booklet anywhere. I decided to put off the Publix shopping until next Tuesday or Wednesday in hopes that my store will get that coupon booklet by then.

I did shop at ALDI and the produce store, though. Here's what I got:


ALDI:

Free Disney vacation planner
