Frugal Food Thursday: Apple and Cheddar Strata

Last week I shared my Apple-Banana Bread recipe, which uses up apples that have bruises or are starting to get old.  Here's another recipe that uses up apples.

Apple and Cheddar Strata is a yummy recipe that uses up not only apples, but day-old bread.  Eggs, milk, and cheese make up the rest of the ingredients in this yummy vegetarian entree.  And it's sweet, so the kids will really like it!

I get my milk and eggs cheap at ALDI.  Cheese I generally buy at the grocery store when there's a sale and I have matching coupons.  I've also found good deals at Target by combining a sale, a manufacturer's coupon, and a Target store coupon.  Shredded cheese freezes very well, so when there's a great deal, buy a lot!

I got this recipe originally from, but made a few changes.


Non-stick cooking spray
8 slices day-old whole wheat bread, cubed
1 tbsp canola oil
2 apples, peeled, cored, and diced
1/2 cup shredded cheddar cheese
2 tbsp brown sugar
2 cups milk
4 egg whites
2 whole eggs
1/2 tsp baking powder
Ground cinnamon

Preheat oven to 375 degrees.  Coat an 8x8x2 baking dish with cooking spray.  Put 3/4 of the bread cubes in the dish.

In a skillet, heat oil.  Saute apples until tender.  Place apples and cheddar cheese on bread cubes and sprinkle with brown sugar.  Add the ramining 1/4 of the bread cubes on top.

In a medium bowl, mix the milk, egg whites, eggs, and baking powder together.  Pour over the bread cubes, pushing down on the cubes to make sure they are saturated with the egg mixture.  Sprinkle top with ground cinnamon.

Bake 40-50 minutes or until puffed and golden.  Allow 5 minute to cool before cutting.

My grandma used to say "Apple Pie without some Cheese is like a Hug without a Squeeze". My grandma gave THE most firm hugs and made the best apple pie. So that must mean that she was right. ;) This sounds so yummy! I am repinning to Pinterest so that I don't forget to make it. Thanks for sharing.

This looks delicious and I will try it. I just recently bought several pounds of Monterey Jack cheese in the clearance part of the grocery store. I paid 75 cents each because they were outdated. I came home and put them in the freezer. I wish I had gone ahead and shredded them but....oh well. But back to your recipe, I love the combo of apples and cheese.

Thank you for sharing another delicious recipe with the Hearth and Soul blog hop. I love the sound of this - apples and cheddar are such a classic combo, and this puts me in mind of apple pie served with a nice slice of cheddar! What a great way to use up leftovers as well.
