Menu Plan: Super Bowl Noshing

Another Monday, another meal plan.

I've been cooking for the freezer this weekend - not full meals, but ingredients that will help make meals come together quicker.  I've made whole-wheat French breads, chicken broth, and crockpot applesauce.  Still to come are tomato sauce and pinto beans.  So I'll be incorporating these ingredients into meals this week.

At the end of the week... Super Bowl Sunday!  This is one of my favorite meals to make all year, and one of my kids' favorites to eat!  Instead of making a main course, I make several appetizers to nosh on throughout the game.

So here's what's on the menu:

Monday - pinto bean chili over brown rice

Tuesday - beef lo mein over thin whole wheat spaghetti noodles

Wednesday - mushroom and cheese pizza on homemade whole wheat crust, cut up veggies

Thursday - whole wheat pasta and tomato sauce with whole wheat garlic bread, salad

Friday - chicken soup with matzo balls, challah, baked chicken, tabbouleh salad

Saturday - leftover extravaganza

Sunday - Super Bowl snacks: jalapeno poppers, nachos, chili, veggies and dip, breadsticks with tomato sauce for dipping

Recipe: Jalapeno Poppers

With Super Bowl Sunday comes one of my favorite meal plans of the year.  I make several appetizers, and we nosh on them throughout the game.  (My kids love this meal, too!)   One of my favorite things to make is jalapeno poppers.  They're a little spicy, though not as much as you might expect, since the creamy cheesy filling cuts the bite of the jalapeno.  And they're delicious!  Though I must admit that this is not the most healthy of recipes, it's certainly fine occasionally.  And certainly it is much less expensive than buying them at the store.

I modified this recipe from one I found on Allrecipes.com.  Make sure to wear gloves when you seed the peppers (removing the membranes as well) and not to touch your eyes.  I learned this lesson the hard way!

Jalapeno Poppers

4 oz. cream cheese, softened
4 oz. shredded Monterey Jack or Cheddar cheese
8 jalapeno peppers, seeded and halved
1/2 cup milk
1/2 cup all-purpose flour
1/2 cup bread crumbs
oil for frying

In a bowl, mix the cream cheese and shredded cheese.  Spoon mixture into halved jalapenos.  Put milk, flour, and bread crumbs into separate bowls.  Dip the stuffed jalapenos into the milk, then into the flour.  Allow to dry for 10 minutes.  Dip the pepper halves into the milk again and then into the breadcrumbs, and let dry again.

In a skillet, heat the oil and deep fry the jalapenos until golden brown, 2 to 3 minutes each.  Remove and drain on a paper towel.

AtTENding to Our Finances in 2010 January update

Now that's the end of January, it's time to look at my family's financial goals for the year and see what progress we're making.  As I posted at the beginning of the year, here are our financial goals:

  • Save up and pay cash for the expenses of my daughter's bat mitzvah by July 2010.  We started the year having saved 58% of the necessary money.  It was a tough month, with insurance and unexpected home repair expenses.  Still, we were able to save enough to have 64% of the required amount.
  • Save up a proper emergency fund by December 2010.  No action on this goal  We have about 10% of the amount necessary.
  •  Once those two goals are finished, pay off our home equity line.  No action on this goal.  We did pay the interest accrued on the loan.

Friday Follies: Blowing the budget (link up your follies, too!)

Friday Follies is a weekly feature here at Frugal Follies, where you can link up your story about a crazy, silly, or just boneheaded thing you did in the name of frugality. Last week I told the story about my garbanzo cake disaster; in previous weeks I shared my story about buying Rome apples for school lunches and about the strange thing in my freezer.

This week's biggest folly for me has to be my trip to the local Albertsons store closing sale.  As I tell my story here, I went to the sale without having a plan.  Though I did get some good bargains, I ended up spending almost $80, way past my budget of $60.  Ah, well.  Such is life, and I'll have to pay for it by having an even smaller weekly budget for the next month.

Look what I got for $79.64 (ugh!) at Albertsons!

This is what happens when you go shopping without a plan.

I stopped by the local Albertsons, because I had heard that they were having a closeout sale. I thought I'd see what was still available. But when I saw that many of the shelves were already empty, I started picking up items that I thought I might need, and that I rarely see on sale and rarely have a coupon for.

I walked out of the store having spent $79.64. Oops. My weekly grocery budget (including paper goods and personal care items) is $60. I spent more than this week's allowance. No, since I already bought food earlier this week, I spent more than next week's allowance. Oops.

So, for the next four weeks, I'll have to limit my budget to $40 per week. Ugh.

But, on a good note, I was able to stock up on many items. For instance, I bought five packages of Goodnites for my daughter. I had already picked up three at the great Walgreens Goodnites deal, but I run out of them quickly. The shelf price was $10.49, but they were 40% off, and I had five $1.50 coupons. So each package was $4.79, an excellent price.

I also got 2 rolls of Marcal paper towels, which after discount were $1.11. I had two $1 off coupons, so I got each roll for $.11!

I stocked up on kosher meat. For those of you who do not keep kosher, you would have sticker shock to see the meat prices. It's one reason why I serve meat only two times a week or so. All kosher meat/chicken was 10% off, and since it rarely goes on sale, I bought a few months' worth. I also got Shabbat candles - over a year's worth.

I will be going back tomorrow... but this time, with a plan to get only the best deals with coupons!

Albertsons stores closing in South Florida - great bargains!

Eight Albertsons stores in Florida, including five in South Florida, will be closing in mid-February.

The addresses of the stores are:

  • 8030 Pines Blvd., Pembroke Pines
  • 20409 State Road 7, Boca Raton
  • 4801 Linton Blvd., Delray Beach
  • 4624 Hypoluxo Road, Lake Worth
  • 12031 Southern Blvd., Loxahatchee
I went to one of the closing stores today, and they are having clearance sales on all items.  The sales were:
  • 20% off all grocery items
  • 33% off frozen foods
  • 40% off health items
  • 60% off cosmetics
  • 30% off wine
  • 10% off beer
  • 25% off liquor
  • 10% off kosher meat
The shelves were cleared in some areas, and there was plenty left in others.  If you live near an Albertsons store that is closing, you will definitely want to check out the prices.  I stocked up on many items which rarely, if ever, go on sale or have coupons for.  Tonight, I'm going to survey my coupon stash and make a plan for another trip.

February Freezer Cooking Daze: Recipe list


Now that there's room in my freezer after doing the Eat from the Pantry Challenge, it's time to fill it back up! I'm participating in the February Freezer Cookie Daze, hosted by FishMama at Life as MOM and Crystal at Money Saving Mom. The plan is to cook for the freezer from Friday until Tuesday (not continuously, of course!).

    Wednesday Weekly Shopping: Too much of a bargain is a bad thing

    I did a lot of shopping this week. I mean, a lot of shopping.

    I went to Publix twice. Besides what I got for $1.17, I made a quick Sunday run to get milk, bread, and juice, spending $9.38.

    I went to CVS twice. Combined, I spent $1.56 on the two trips and got back $2 in ECBs.

    I took a rare trip to Winn-Dixie, where I spent $7.95 on a bunch of things.

    I went to Target, where I got free Nivea body wash and cheap cream cheese. I paid with a gift card.

    And then, the other trips. I went to Walgreens and did the Goodnites deal. I had $4 in Register Rewards to spend, so, with tax, I ended up spending $20.09 (and got $5 in Register Rewards back). That was a third of what I spent the whole week! But now I won't have to buy more Goodnites (for my daughter with special needs, who isn't fully toilet-trained yet) for a while.

    I also bought some basics at Walmart and Western Beef. At Walmart I bought milk, cheese, and tortillas, without any coupons, and spend $8.66. At Western Beef, I bought eggs, tomatoes, red peppers (cheaper than the green peppers because of the cold snap that hit our area earlier this month), apples, and lemon juice, spending $9.82 without any coupons.

    And it was the lemon juice that did me in. I hadn't bought any since I ran out during the Eat from the Pantry Challenge. But I spied some off-brand lemon juice, selling at the bargain price of $.99 a quart. It was such a bargain, I had to get three!

    My total for the week was $60.48, 48 cents over my budget of $60. Had I only bought two bottles of lemon juice, I would have been under budget. Darn.
