Frugal Food Thursday: Romaine and Orange Salad

Earlier this week, I went looking in my frugal recipe list for a salad recipe to link to the Bloggy Progressive Dinner, when I realized I didn't have one!

That's probably because I favor one-pot meals, or stews or stir-fries that are served over brown rice or pasta. That's just my cooking style; I don't usually make multi-course meals.

But here's a salad recipe I like. I originally got it from my sister.  Since I've stocked up on mandarin oranges, the major cost for me is the lettuce greens.  But I've often found lettuce on sale in buy one, get one free sales.  Also, feel free to substitute any other salad vegetables you happen to have around.

Romaine and Orange Salad

1 head romaine lettuce
1/2 head iceberg lettuce
1/2 cup chopped celery
1/2 cup chopped scallions
1/2 cup chopped red pepper
1 can mandarin oranges

Dressing:
3 tbsp sugar
1/4 cup oil
3 tbsp apple cider vinegar
Freshly ground black pepper to taste

Combine lettuces, celery, scallions, red pepper, and mandarin oranges.  Mix the ingredients for the dressing.  Pour the dressing over the salad and mix well.

I've seen variations of this before. This looks very good. I want to try it.

The worst I've ever seen was a catered event where the salad looked like it was made the day before, the cream cheese was made of tofu and the coffee was instant. :-(

Your salad sounds delicious. My Mom used to use Mandarin oranges a lot, but I had kind of forgotten about them. I'm definitely going to buy some next time I'm at the supermarket!!

This would be a great recipe for my sister and I since we are now planning one eating healthier and trying to lose a few pounds. It sounds wonderful
